Pumpkin and Coconut Soup with Coconut Sambal
Ingredients
½ T coconut oil
1 medium onion, finely chopped
1 large clove garlic, finely chopped
½ medium pumpkin, peeled and cut into small chunks
50 gms red lentils
½ c coconut cream
1 T curry powder
2 c chicken or vegetable stock
1 small stalk lemongrass, roughly chopped
½ t salt
a good grinding of black pepper
rind of 1 lime
juice of ½ lime
Coconut Sambal
1 large clove garlic
a large handful of fresh coriander
¼ c dry roasted cashews
juice of ½ lime
1 small red chilli
2 T toasted thread coconut
Heat coconut oil in a large pot, add the onion and garlic and cook until browned, approximately 5 minutes. Add the rest of the ingredients (ensuring there’s enough liquid to just cover the pumpkin, add more if needed) and allow to simmer for about 30 minutes or until the pumpkin is tender. Puree to a smooth consistency and serve with an extra drizzle of coconut cream or the accompanying Coconut Sambal.
To make the coconut sambal, process all the ingredients in a small food processor until fine. Place a spoonful on top of soup when serving. Excess will last for 2 weeks in the fridge.

Thermomix Instructions
Prep time: 10 minutes | Cook time: 25 minutes | Serves 6-8
100 gms red lentils
2 cloves garlic
1 small stalk lemongrass, roughly chopped
180 gms brown onion, halved
1 kg pumpkin, peeled and cut into small chunks
1 T curry powder
400gm coconut milk
2 t chicken or vegetable stock
450 gms water
½ t salt
a good grinding of black pepper
rind of 1 lime
juice of ½ lime
Coconut Sambal
1 large clove garlic
a large handful of fresh coriander
¼ c dry roasted cashews
juice of ½ lime
1 small red chilli
2 T toasted thread coconut
Place lentils, garlic and lemongrass into mixing bowl and millÂ
Add 500 gms pumpkin and chopÂ
Add remaining 500 gms of pumpkin and chop 5 sec/speed 7. Transfer into same bowl.Â
Place onion and oil into mixing bowl and chopÂ
Add curry powder, stock paste, water, coconut milk, and reserved pumpkin/lentil mixture and cook 20
Coconut Sambal
Add all the ingredients into mixing bowl and chop 3 sec/speed 6 or until desired consistency. Transfer into serving bowl.Â
