Spiced Apple Cake

Prep time: 10 minutes | Cook time: 35-40 minutes | Serves: 8-10

This is a divine cake, served warm with yoghurt or whipped cream (or on its own). It’s also fabulous if you need to do some baking for a friend, it's always a winner!

Ingredients

125 g butter
2 medium granny smith apples
1 egg
Âľ c coconut sugar (or brown sugar) / 85g
1 t baking powder
1 t baking soda
¾ c flour / 100 g (use 1½ c / 200 g gluten-free flour mix if gluten free - replacing both flours)
¾ c / 100 g wholemeal flour
2 t mixed spice
1 t cinnamon

Topping
50 g butter
½ c / 55 g rolled oats (use quinoa flakes if gluten-free)
ÂĽ c / 45 g coconut sugar (or brown sugar)
1 t cinnamon

Instructions

Preheat oven to 180°C. Grease and line a round cake tin (20 cm) and set aside.

Conventional

Grate the apple, skin included. Melt the butter in a pot, add grated apple, sugar and egg. Mix in dry ingredients and pour into the tin and pour over the topping.

Topping
Melt the butter in the same pot, add the rolled oats, coconut sugar and cinnamon. Spread evenly over the top of the cake.

Bake for 30-35 minutes (180°C) or until a skewer inserted into centre of the cake comes out clean. Allow to cool in tin for 5 minutes then transfer to a wire rack.

Serve warm with yoghurt or whipped cream.

Thermomix

Quarter apples, removing core. Place apple in the mixing bowl and chop 3 secs/speed 5. Transfer into a separate bowl. 

Place butter into mixing bowl and melt 2 min 30 sec/80°C/speed 1.

Add apple, egg, flours, sugar, baking powder, baking soda, mixed spice and cinnamon and mix 10 sec/speed 3.

Pour mixture into prepared cake tin. Clean and dry mixing bowl. 

Topping
Place butter into mixing bowl and melt 1 min 30 sec/80°C/speed 1. Add rolled oats, sugar and cinnamon and mix 5 sec/speed 3. 

Pour over top of the cake and evenly spread.
