Black Bean Hummus

This Black Bean Hummus is the perfect snack to have in the fridge. Great with veggie sticks or crackers, toasted pita pockets, as a sandwich filling or as part of a platter.Â

Ingredients
- 400gm can black beans, rinsed & drained, or 1 ½ c freshly cooked
- 2 cloves garlic
- 2 T tahini paste (ground up sesame seeds)
- 2 T water
- 2 T fresh lime juice
- 1 T olive oil
- 1 ½ t cumin powder
- Âź t salt
- ½ c fresh coriander, roughly torn
- splash of apple cider vinegar, (optional)
- Âź t chilli flakes
- ½ c spring onion, finely chopped, to garnishÂ

Instructions
- Mix the first 9 ingredients in a food processor and blend until smooth. (In your Thermomix, blend 30 secs/speed 10, scrape down the sides and repeat). Add a splash of apple cider vinegar at the end if you require a bit more tang, and some chilli flakes if desired.Â
- Spoon into a bowl, garnish with some finely chopped spring onion and serve with toasted pita breads, veggie sticks or seedy crackers.
