Lemon Bliss Balls

These Lemon Bliss Balls are zesty, fresh, and the perfect quick snack when you want something a little sweet but still nourishing. Iāve included both the conventional and Thermomix methods so you can make them whichever way suits you best.

Ingredients
- ¼ c coconut oil / 35gĀ
- 4 medjool dates pitted and soaked in boiling water for 5 minutes, drained, or 85g dates, unsoaked for Thermomix
- ½ c / 80g sunflower seeds
- ½ c / 80g pumpkin seeds
- 1 c / 100g desiccated coconut
- 1 t vanilla essence (or ¼ t vanilla powder)
- pinch salt
- rind of 2 medium lemons
- juice of 1 ½ medium lemons
- extra fine coconut for rolling

Instructions
- Melt coconut. Then place everything in the food processor (except extra coconut for rolling) and blitz until well combined.
- Using damp hands, form into round balls and roll in the extra coconut.
- Chill for a minimum ofĀ 60 minutes or until firm. Store in the fridge in an airtight container. Suitable to freeze.
Thermomix Instructions
- Place coconut oil in the mixing bowl, and melt, 1 min 30 secs/80 C/Speed 2.
- Add all the rest of the ingredients (except extra coconut for rolling) andĀ blend 5 sec/speed 7. Scrape down the sides and blend 5 sec/speed 5 if required. Roll into balls and roll in extra desiccated coconut.
- Chill in the refrigerator to set for at least one hour or overnight. Store in an airtight container in the fridge. Suitable to freeze.
